How to Make Raspberry Cookie Sandwiches

This was one of my favorite recipes when I was younger, and it’s not very hard to make. The cookies only have 5 ingredients, and the most difficult part is rolling out the dough and cutting out the cookies(to make this easier make sure the dough is cold). These are great to make if you’re craving something sweet or are bored, and many of us have a lot of extra time on our hands right now, so why not do some baking?
Step 1: Check to make sure you have all the ingredients
There’s nothing worse than being halfway through a recipe, only to discover you’re missing a key ingredient. Before you get started make sure you have everything you’ll need.
For the cookies:
300 grams or about 2 cups flour
1 tablespoon baking powder
250 grams or about 1 ¼ cups sugar
250 grams or about 2 ¼ sticks of (salted) butter*
1 large egg yolk
For assembly:
Raspberry jam
Powdered sugar(optional but recommended)
* The butter is easier to work with if it’s softened, so take it out of the fridge now. Otherwise you should cut it into smaller pieces before mixing.
Step 2: Wash your hands
Hopefully this goes without saying, but make sure to clean your hands.
Step 3: Mix together the flour and baking powder in a bowl
Step 4: Add the rest of the cookie ingredients
Don’t add the jam or powdered sugar. Clean your hands thoroughly, and then mix it together using your hands. Keep mixing until everything is well incorporated and you can easily pack it together. It might take some time depending on the state of the butter. When you’re done you should have a single smooth ball of dough.
Step 5: Let chill
Place the dough in the fridge and leave it there for at least 45 minutes (longer is better) while you move on to Step 6.
Step 6: Wait and prepare
While the dough is chilling, preheat the oven to 390°. Then put some parchment paper on a baking pan. Lastly, place a large piece of parchment paper on the table and find a rolling pin.
Step 7: Cut the cookies
Remove the dough from the fridge and place it on the parchment paper. Place another large piece on top of it and roll it out into a thin layer. Remove the top piece of paper, and then using a cookie cutter or a glass the size of your choice, cut out the dough into the shape you want and place them on the pan. You can also just use a knife, but be careful. Gather any leftover dough and repeat until there isn’t any extra.
Step 8: Bake
Place them in the preheated oven and bake until golden. They will need about 10 minutes, but keep an eye on them constantly to make sure they don’t get burnt.
Step 9: Cool
When done, remove from the oven and let sit until cool.
Step 10: Assemble
Spread raspberry jam on a cookie, and then put another one on top, like a sandwich. Consider using a sifter to add powdered sugar on top.
